Sweet & Chewy Chia Oat Bites

Updated: Sep 7, 2020

If you're craving a sweet treat, but don't have time (or want) to bake cookies, these oat bites are a must try!

Last time I had a bit of a sweet tooth, I decided to give these chewy rolled oat bites a try. I was expecting to enjoy them, but didn't expect to LOVE them as much as I did! Not only did it take 10 minutes or less to throw them together, they lasted several days in the fridge and taste so good every bite.

I mainly followed the recipe from The Lemon Bowl, but altered it a bit based on what I had in my pantry and my specific tastes. That's another great thing about these; they are super customizable so you can make them to your liking.

  • 1/2 cup creamy natural peanut butter

  • 1/4 cup honey

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1 1/2 cups oats old fashioned or quick cooking

  • 1/4 cup chia seeds

  • 1/4 cup chocolate chips

  • 1/4 cup flaxseed meal ---> which I did not have! I added a little bit extra peanut butter and honey at the end to make sure everything stuck together

You can make these vegan by substituting something else for the honey, like maple syrup, or leave it out.

I mixed the PB, honey, chocolate chips and all the spices together. Then I mixed the oats and chis seeds together and added the oat and chia mixture into the rest a couple handfuls at a time. Then I used a spoon to scoop bite sized (very large bite sized) batter to roll into a ball which I put directly into the glass container I was going to store them in. I separated the rows with parchment paper.

Chilling in the fridge is optional and up to your preference. In my case it was also because I wanted them to solidify a bit more. Perhaps the lack of flaxseed meal? :)

Why Chia?

Chia seeds are a good source of protein, fiber, antioxidants and other nutrients. For such tiny little seeds, they can give quite the nutrient boost; one ounce of seeds has about 5g of protein! I also find them awesome because you can add them to SO many dishes for extra nutrients without dealing with much added flavor or consistency. They're just kinda there giving you a silent helping hand.

Enjoy!! Just as yummy as a cookie.
